I am a sucker for cheese. I have developed this recipe and I gotta say, it’s a winner. It can be made in a skillet and served over pasta, traditional Fettuccine Alfredo. I made this in my fondue pot and served it as an appetizer. By the time dinner was served, there was none left.

Ingredients
  • 8 ounces Parmagen cheese, shredded
  • 4 ounces Asiago cheese, shredded
  • 2 garlic cloves, minced
  • ½ stick butter
  • ½ pint heavy whipping cream

  • 2 apples
  • 1 teaspoon lemon juice
  • ½ head cauliflower
  • Bread
Instructions
  1. Melt butter and sauté garlic on medium for a few minutes.
  2. I used a fondue pot, but this can be done in a pot over the stove.
  3. Add heavy whipping cream and stir in both cheeses.
  4. Stir frequently, until cheeses are melted and the mixture is smooth and creamy. It should take about 20 minutes.
  5. Meanwhile, slice apples and let them soak for a minute or two in a mixture of 1 cup water and a teaspoon of lemon juice. This helps the apples from turning brown.
  6. Clean and cut cauliflower.
  7. Cut bread into 1 inch cubes.
  8. Reduce heat and serve Alfredo with apples, cauliflower and bread.

I don’t get enough use of my Fondue pot. It is a fun way to serve when entraining. Feel free to experiment with different dippers. I think bread is the best, but I like to add a few healthier options.
