Well, this is different yet amazingly delicious. So, I have made it three times since I discovered it. Such a great lunch idea.
Fresh, healthy and satisfying can only begin to describe our Avocado Caprese Salad.
Avocado Caprese Salad
of cherry or grape tomatoes
, cut in halves
fresh mozzarella balls
of basil paste or fresh basil
4 - 6
of balsamic vinegar glaze
Salt and pepper
, to taste
Cut the avocadoes in half lengthwise, remove pits and carefully peel the avocado halves.
Then, place the peeled avocado halves on a plate.
Top with tomato, mozzarella and basil.
Salt and pepper, to taste.
Drizzle with the balsamic vinegar glaze.
I usually have fresh basil on hand. But, I keep basil paste in the fridge in case I run out of fresh. As a last resort, dried basil will do the trick.
