Avocado Caprese Salad

Well, this is different yet amazingly delicious. So, I have made it three times since I discovered it. Such a great lunch idea.

Fresh, healthy and satisfying can only begin to describe our Avocado Caprese Salad.

Avocado Caprese Salad
  • 1 pint of cherry or grape tomatoes, cut in halves
  • 8 ounce fresh mozzarella balls
  • ½ cup of basil paste or fresh basil
  • 4 avocados
  • 4 - 6 tablespoons of balsamic vinegar glaze
  • Salt and pepper, to taste
  1. Cut the avocadoes in half lengthwise, remove pits and carefully peel the avocado halves.
  2. Then, place the peeled avocado halves on a plate.
  3. Top with tomato, mozzarella and basil.
  4. Salt and pepper, to taste.
  5. Drizzle with the balsamic vinegar glaze.
  6. Serve immediately.


Avocado Caprese Salad

I usually have fresh basil on hand. But, I keep basil paste in the fridge in case I run out of fresh. As a last resort, dried basil will do the trick.
