Avocado Spinach Egg Salad

This Avocado, Spinach and Egg Salad recipe is so yummy and healthy. That is a combination that is hard to come by.

Make sure to save the avocado pits to place into the leftovers to prevent the avocado from browning. It really works.

 

Avocado, Spinach and Egg Salad
 
Ingredients
  • 3 eggs
  • 1 large avocado, peeled and pitted
  • 1 stalk celery, chopped
  • ½ cup baby spinach, chopped
  • 2 oz plain greek yogurt
  • 1 Tbs lemon juice
  • ½ tsp sea salt
  • ½ tsp hot pepper flakes
  • Bread
Instructions
  1. Boil eggs, cool and peal.
  2. In a mixing bowl, mash eggs and avocado.
  3. Mix in greek yogurt, lemon juice and sea salt.
  4. Stir in celery and spinach.
  5. Sprinkle with hot pepper flakes.
  6. Serve between two slices of bread.

Be sure to choose ripe avocados. If the avocados are a little hard, I use a potato masher to mash them.
