Baked Manicotti with Cheese

Jerry’s parents came over for dinner. Cindy is Italian, so we thought Baked Manicotti with Cheese would be a good choice.

The four of us sat around telling stories and laughing. After Jerry, Jer & I polished off a few bottles of wine, Cindy had to drive Jer home.

Baked Manicotti with Cheese
  • 1 package (8 oz) manicotti pasta
  • 30 oz container ricotta cheese
  • 2 cups shredded Italian blend cheese or mozzarella
  • 3/4 cup grated parmesan cheese
  • 3 Tbs chopped fresh parsley
  • 2 eggs
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • Cooking spray
Spaghetti Sauce
  • 29 oz can tomato sauce , I use Hunts
  • 12 oz can tomato paste , I use Hunts
  • 1 small diced yellow onion
  • 4-5 cloves minced garlic
  • 2 Tbs olive oil
  • 3 Tbs parsley
  • 4 Tbs basil
  • 1 tsp season salt
  • 1/2 tsp pepper
  1. In a medium sauce pan, add all spaghetti sauce ingredients.
  2. Bring to a boil.
  3. Cover, reduce heat and simmer while preparing the rest of the dish.
  4. Cook manicotti pasta according to package directions.
  5. Heat oven to 350º.
  6. Coat 13x9 baking dish with cooking spray.
  7. In a large bowl, stir together ricotta cheese, 1 cup Italian cheese, 1/2 cup parmesan cheese, parsley, eggs, salt and pepper.
  8. Spoon mixture into pasta.
  9. Arrange filled pasta in a single layer in baking dish.
  10. Pour sauce over pasta.
  11. Sprinkle 1 cup Italian cheese and 1/4 cup parmesan cheese on top.
  12. Cover and bake 40 minutes.
  13. Remove cover and bake an additional 15 minutes.

I am such a sucker for cheese. You can never have too much cheese in a dish.

Spaghetti Sauce Baked Manicotti with Cheese

When I cook, I usually do not measure anything. I add more or less of each spice depending on my mood that day. This way I get to taste the food while I am cooking.
