BLT – Bacon, Lettuce and Tomato Sandwich

Nothing beats a good old-fashioned BLT. Extra crispy bacon & fresh tomatoes always hit the spot.

Oh how I miss the tomatoes back east. Living in Las Vegas, fresh tomatoes are out of the question. A few years ago my step-mother, Glenda, sent me a box of fresh-from-her-garden tomatoes via UPS. It was one of the greatest gifts, EVER!!! I don’t know what she paid in shipping, but it was worth every penny.

Ingredients
  • 1 pound bacon
  • 2 large, fresh tomatoes
  • 8 leaves lettuce
  • 8 slices of bread
  • Mayonnaise
Instructions
  1. Fry bacon over med-high heat. The crispier, the better.
  2. Clean and slice tomatoes.
  3. Wash and leaf lettuce.
  4. Toast bread.
  5. Assemble each sandwich by spreading a glob of mayonnaise on a slice of bread. Add 4 pieces of bacon on top. Place 3 slices of tomato, then 2 leaves of lettuce and top with another slice of bread.
  6. Cut diagonally. It doesn't taste as good if cut horizontally, really 😉

Age-old question, mayonnaise or Miracle Whip? When I was a kid it was Miracle Whip, now only mayonnaise. I prefer Best Foods or Hellman’s.
