Breakfast Casserole Supreme

Perfect for breakfast for a crowd. I make the Breakfast Casserole Supreme the night before, get up in the a.m. and toss it in the oven, go take a shower and get ready for the day…Voila breakfast for our guests. Done.

Breakfast Casserole Supreme
Ingredients
  • 1 pound sausage , crumbled & cooked
  • 1 bag (20 ounce) diced hash browns, thawed
  • 10 large eggs
  • ½ cup milk
  • 1 bag (2 cups) shredded mild cheddar cheese (I used colby & monterey jack blend)
  • Salt & Pepper , to taste
Veggies of choice:
  • 1/2 onion , diced
  • 1/2 green pepper , diced
  • Handfull of fresh spinach
Instructions
  1. Preheat oven to 350º.
  2. Cook sausage in a skillet.
  3. Spray medium (9 x 13) casserole dish with non-stick spray.
  4. In casserole dish, scatter diced hash browns, top with ½ cheese followed by crumbled cooked sausage. Add veggies.
  5. In a medium bowl, beat eggs and milk. Add salt and pepper, to taste.
  6. Pour eggs over casserole. Top with cheese.
  7. Cover and store in refrigerator overnight or bake immediately.
  8. Bake covered (with lid or aluminum foil) for 50 minutes. Uncover and return to oven, cook uncovered for an additional 10 minutes.
  9. Allow casserole to rest for 15-20 minutes.

I love vegetables, any vegetable. But, we all have those picky eaters to cook for. So, cooking for a crowd I make 2 casseroles, one plain and one supreme.

Ingredients
  • 1 pound sausage , crumbled & cooked
  • 1 bag (20 ounce) diced hash browns, thawed
  • 1 dozen
  • ½ cup milk
  • 2 bags (4 cups) shredded mild cheddar cheese (I used colby & monterey jack blend)
  • Salt & Pepper , to taste
Veggies of choice:
  • ½ onion , diced
  • ½ green pepper , diced
  • Handfull of fresh spinach
Instructions
  1. Preheat oven to 350º.
  2. Cook sausage in a skillet.
  3. Using 2 small casserole dishes scatter 1/2 diced hash browns in each.
  4. Top each with a cup of cheese followed by 1/2 crumbled cooked sausage in each.
  5. Add veggies to Supreme Casserole.
  6. In a medium bowl, beat 6 eggs and 1/4 cup milk. Add salt and pepper, to taste.
  7. Pour eggs over casserole. Top with a cup cheese.
  8. Repeat eggs and cheese to other casserole.
  9. Cover and store in refrigerator overnight or bake immediately.
  10. Bake covered (with lid or aluminum foil) for 50 minutes. Uncover and return to oven, cook uncovered for an additional 10 minutes.
  11. Allow casseroles to rest for 15-20 minutes.
