Broccoli Cheddar Cheese Soup

Broccoli Cheddar Cheese Soup is perfect for the cold winter days. Nothing like soup to warm you up. And, did I mention cheesy broccoli? Yummmmmm!!


Broccoli Cheddar Cheese Soup

Broccoli Cheddar Cheese Soup
  • 1 Tablespoon olive oil or butter
  • 1⁄2 medium onion, chopped
  • 2 Tablespoons olive oil or butter
  • 1⁄4 cup flour
  • 2 cups half-and-half cream
  • 2 cups chicken broth
  • 1⁄2 pound (3 cups) fresh broccoli, chopped into small pieces
  • 1 cup carrot, julienned
  • 8 ounces (2 cups) cheddar cheese, grated
  • Salt and pepper, to taste
  1. Sauté onion in 1 Tablespoon olive oil or butter, set aside.
  2. Over medium heat, cook 2 Tablespoons of olive oil or butter and flour using a whisk for 2 or 3 minutes, stir constantly. Slowly add the half & half.
  3. Add the chicken broth. Reduce heat and simmer for about 10 minutes.
  4. Add the broccoli, carrots and reserved onions. Let simmer on low heat for 20-25 minutes.
  5. Add salt and pepper.
  6. Add the cheese and let cheese melt though over low heat.
  7. Serve with crusty bread or crackers.



Broccoli Cheddar Cheese Soup

This soup is like the soup at Panera Bread. I think Panera adds a little nutmeg to their soup for a bit of a nutty flavor. I tried to sprinkle a bit in my bowl to test it. Kinda like it better minus the nutmeg. To each their own.
