I make Peanut Butter Balls a.k.a Buckeyes every year. This is the first that we left a bit of peanut butter showing, which makes them resemble a buckeye, hence the name of the recipe.

This happens to be my brother-in-laws fav, so Sarah and I have made them twice this Christmas season.

I have tried different versions, with cream cheese, no vanilla. This is the best…peanut butter, powdered sugar & vanilla dipped in chocolate, period.

Ingredients
  • 1 cup peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 oz chocolate
Instructions
  1. Mix peanut butter and vanilla extract. Mix in powdered sugar. Feel free to add more or less for desired consistency.
  2. Roll into small balls.
  3. Place in freezer for about an hour.
  4. Melt chocolate using a double boiler or microwave. I place chocolate wafers in a glass bowl and microwave on DEFROST for a couple minutes. Make sure to check on it often and stir, DO NOT WHIP.
  5. Pierce ball with toothpick, dip into chocolate (leaving a little of the ball showing), place on waxed paper, use another toothpick to remove the toothpick.
  6. Let rest to harden chocolate.
  7. Use toothpick or finger to blend the little hole.
