Buffalo Chicken Soup

Ingredients
  • 6 cups chicken stock
  • 8 ounces cream cheese
  • ⅔ cup favorite buffalo wing sauce, I used Texas Pete's
  • 1 cup half and half
  • 2 tablespoons butter
  • Salt and pepper
  • 2 pounds cooked chicken breast, shredded. I boiled the chicken, but rotisserie chicken would work well.
  • 1 or 2 cups chopped celery, I like a lot of celery
  • Shredded cheese or crumbled blue cheese, if desired
Instructions
  1. Combine stock, cream cheese, buffalo wing sauce, half & half, and butter. Pulse in blender, in small batches.
  2. Pour into stock pot and heat over medium low until simmering. Do not boil.
  3. Add salt and pepper, chicken, and celery. Allow to cool an additional 3-5 minutes.
  4. Serve topped with cilantro, dressing, and cheese, if desired.
