Buffalo Chicken Tortilla Bites

Yup, these Buffalo Chicken Tortilla Bites were good. I had the intention of them being true pinwheel snacks. What I had in mind and what actually came out are a bit different. Thinking about what others put in the pinwheels looked amazing, but I wanted more chicken and less cream cheese. I guess I altered it to be sorta like a wrap cut up and served as finger food. Definitely not disappointed.

Ingredients
  • 8 ounces cream cheese, softened
  • 1 cup hot wing sauce, I used Texas Pete's wing sauce
  • 2 pound chicken breast, cooked and shredded
  • 1 cup blue cheese, crumbled
  • 2 cups celery, chopped
  • 6 large flour tortillas, I used spinach wraps
Instructions
  1. In a bowl, beat cream cheese and add in sauce.
  2. Stir shredded chicken into mixture by hand.
  3. Stir in blue cheese and celery.
  4. Spread approximately ¾ cup of mixture on top of one of the tortillas. Roll up tortilla tightly, but without shifting the mixture too much. Repeat with remaining tortillas. Place rolled tortillas on a place and cover with plastic wrap.
  5. Refrigerate for 2-4 hours.
  6. Remove from refrigerator and unwrap. Slice each rolled tortillas in half and then each half into 3 slices, discarding ends.
  7. Place slices on serving plate or tray.
