Caprese Pasta Salad

What a great dish. Pasta salad is always a potluck favorite. Why not add a twist to an old faithful, Caprese Pasta Salad.

Caprese Pasta Salad
 
Ingredients
  • 1 pound pasta
  • 1 cup (8 oz) small fresh mozzarella balls, cut in half
  • 2 pints Cherub or grape tomatoes, cut in half
Basil Pesto
  • 1 cups fresh basil
  • 2 clove garlic
  • 1 cup grated Parmesan
  • ½ cup olive oil
  • ⅛ cup balsamic vinegar
  • Sea salt and fresh groung pepper, to taste
Instructions
  1. Cook pasta according to package. Drain and set aside to cool.
  2. Using a food processor, pulse basil, garlic, Parm, olive oil and balsamic vinegar.
  3. In a large bowl, toss pasta, mozzarella balls, tomatoes, salt and pepper.
  4. Add the pesto and toss until pasta is evenly covered.
