Caramel S'mores

 Our friends, Matt & Leslie, were having some friends over for “Sunday Funday” and to enjoy a fire in their backyard. Since Jerry & I don’t eat a lot of sweets and I need to bake some for my blog, I thought this would be a perfect opportunity to pawn my sweets off on my friends. Not to mention Leslie is pregnant and has a sweet tooth these days.

The get-together was around a fire, so Caramel S’mores seemed appropriate.

Ingredients
  • Your favorite chocolate chip cookie dough (can be store bought or try this amazing recipe for Chocolate Chip Cookies)
  • Rolos or other chocolate and caramel candy (I used 24 Rolos)
  • Mini marshmallows (I used 3 per Caramel S'more, 72 marshmallows)
  • 1/2 cup chocolate (I used Ghirardelli dark melting chocolate)
Instructions
  1. Preheat oven to 375º.
  2. Make Chocolate Chip Cookie dough according to directions.
  3. Spoon dough into muffin tins. One batch I just spooned it and the other batch I molded it to the side of the tin. I felt it was a toss up of which I preferred.
  4. Cook for 7-8 minutes, until golden on the edges.
  5. Place a Rolo into the center of each cookie. Make it flush to the top of the cookie.
  6. Place 3 marshmallows on the top.
  7. Cook for an addition 3-4 minutes.
  8. Let cool for 10 minutes.
  9. Transfer to wire cooling rack, let cool.
  10. Melt chocolate. Place chips in a glass bowl and place on DEFROST for a couple minutes. Check on it often, stir do not whip.
  11. Place melted chocolate in a sandwich baggie, clip off corner and pipe chocolate over S'more.
