I am not much of a breakfast person, but I get requests for this often. Cheesy Potato Breakfast Casserole is so easy to prep the night before. Simply get up in the a.m., pop it in the oven & breakfast is served.
1 bag (2 cups) shredded mild cheddar cheese, separated in half
Salt & Pepper, to taste
Preheat oven to 350º.
Cook sausage in a skillet
Spray medium (9 x 13) casserole dish with non-stick spray.
In casserole dish, scatter diced hash browns, top with ½ cheese followed by crumbled cooked sausage.
In a medium bowl, beat eggs and milk. Add salt and pepper, to taste.
Pour eggs over casserole and sprinkle rest of cheese. Cover with lid or aluminum foil.
Store in refrigerator overnight or bake immediately.
Bake covered for 50 minutes. Remove foil or lid and cook uncovered for an additional 10 minutes.
Allow casserole to rest for 15-20 minutes.
I prefer to add peppers, onions and jalapeños. But, I was serving it to my mom and Jerry’s mom who like Plain Jane. Have fun with it. Add tons of veggies, maybe some mushrooms. How about some diced ham?
