When we lived in Pennsylvania, our family & friends used the same great caterer for big events. She made a delicious tortellini, broccoli & cream sauce dish. Missing that dish from years ago, I came up with this, Chicken Tortellini Alfredo, to fill the craving.
Chicken Tortellini Alfredo
1poundboneless skinless chicken breasts
6ozAsiago cheese, grated
8ozParmesan cheese, grated
1package(9 ounces) refrigerated cheese tortellini
2cupsfresh broccoli florets
Coat the chicken breast in Italian dressing.
Refrigerate and let marinade at least 30 min.
Grill chicken or bake until fully cooked (bake in oven at 375º for 35-40 minutes).
Cut cooked chicken into strips.
Make the Alfredo sauce by sautéing butter and garlic on medium heat for a couple of min. (about 4 min.)
Add heavy cream & cheeses.
Lower heat and let simmer until cheese is melted, stirring often (about 20 min.) The slower you melt the cheese the better the sauce will turn out.
In the meantime, cook tortellini according to package.
In the meantime, steam broccoli.
Add the cooked tortellini, grilled chicken and steamed broccoli to the Alfredo cheese sauce.
