Copy Cat Thin Mints

Believe it or not, Copy Cat Thin Mints are made with Ritz Crackers. They taste identical to Girl Scout Thin Mints Cookies.

I used to make this cookie with my mom when I was young. They always make it to my chocolate plate for Christmas. These are Jerry’s favorite.

Copy Cat Thin Mints
Ingredients
  • 1 Sleeve Ritz Crackers
  • 12 oz Dark Chocolate
  • 1 Tbs peppermint extract
Instructions
  1. Melt chocolate using a double boiler or microwave. I place chocolate wafers in a glass bowl and microwave on DEFROST for a couple minutes. Make sure to check it often and stir, DO NOT WHIP.
  2. Stir in peppermint extract.
  3. Dip crackers, one by one, into the chocolate mixture using tongs or a chocolate dipping tool. I have always used tongs, but this year I bought a dipping tool at Michael's. It is great.
  4. Place each cookie on waxed paper.
  5. Let rest until chocolate has hardened.

Copy Cat Thin Mints

I made Some with Ghiradelli Chocolate and some with with Wilton Candy Melts. The darker ones are Wilton.

Chocolate Caramel & Pecan Clusters

We made Copy Cat Thin Mints, Chocolate Caramel & Pecan Clusters, Chocolate Covered Pretzels, Peanut Butter Balls (Buckeyes) & Molded Chocolates.
