Country Style Sausage Gravy

Buttermilk Biscuits & Country Style Sausage Gravy, I think I have died and gone to heaven. Or, at least I feel like I am at grandma’s house. “Doodle Sop,” that’s what my grandma always called biscuits & gravy, reminds me of my childhood.

I like to make homemade biscuits. Here is the recipe that my grandma has always made: Homestyle Buttermilk Biscuits

Ingredients
  • 1/2 pound pork breakfast sausage
  • 1 Tablespoon of butter , bacon fat or vegetable/canola/olive oil (optional)
  • 1/4 cup of all purpose flour
  • 1/4 teaspoon of freshly ground black pepper , or to taste
  • 1/2 teaspoon of kosher salt , or to taste
  • 3 to 4 cups of milk , more or less, as needed
Instructions
  1. Brown sausage in a large skillet, breaking up and crumbling the meat as it cooks.
  2. Once the meat is fully browned, if the sausage did not produce much fat, stir in the butter, oil or bacon fat to the skillet until melted.
  3. Sprinkle the flour on top of the meat and bring the pan up to a medium high heat.
  4. Grind pepper directly into the gravy, add salt to taste, mix well.
  5. Cook, stirring often, for 5 minutes.
  6. Slowly begin whisking in the first two cups of milk until fully incorporated and mixture begins to bubble.
  7. Continue whisking in additional milk a little bit at a time, until the gravy reaches the desired consistency.
  8. Serve with biscuits.
