Crunchy Baked Asparagus Spears

These Crunchy Baked Asparagus Spears are amazing. Plus they are baked, not fried. They turned out crispy and delicious.

 I often order an appetizer as my meal at restaurants.

Crunchy Baked Asparagus Spears
  • 8 oz asparagus tips
  • 2 egg whites
  • 1 Tbs mayonnaise
  • 2 cups Italian style bread crumbs
  • 1/2 cup Parmesan cheese
  • 1/2 tsp paprika
  • 1/2 tsp season salt
  • 1/2 tsp garlic power
  • 1/2 tsp cracked pepper
  • Pam spray olive oil
  1. Preheat oven to 425º
  2. Whisk egg whites and mayonnaise in a dish.
  3. In another dish, mix bread crumbs, Parmesan cheese, paprika, season salt, garlic powder and pepper.
  4. Dip each asparagus spear into the egg wash, then coat evenly with seasoned bread crumbs.
  5. Place spears on a wire rack on top of a cookie sheet.
  6. Spray with Pam or drizzle with olive oil.
  7. Bake 20 minutes.
  8. Serve with sauce of choice. I used salsa ranch dressing. Other options would be marinara or ranch.

I have always heard that asparagus makes your pee smell. I just don’t get it, because mine doesn’t. So, I did a little research. Most people, after eating asparagus, notice a smell when they urinate. It smells vinegary or like rotten cabbage. That is normal. Some people have a gene that breaks down the substance, hence why I do not smell it.

Or, another theory is that some people can’t smell that scent and it really does stink. I hope I don’t have a broken smeller.  Crunchy Baked Asparagus Spears
