Fruit Pizza Cookies

Just so you know, . I was a lil disappointed as I was making them. It’s the middle of June in Las Vegas – 110º outside. By the time I got back from the grocery store and opened the package of cookie dough, it was pretty much mush. But, I kept trucking. I made due with mushy cookie dough. They came out of the oven flat and smashed together on the cookie sheet. I had to cut them apart and the shape was more of a square than a circle. The outcome looked rather pretty, all things considered. And, not a single complaint.


Fruit Pizza Cookies
  • 1 tube Pillsbury sugar cookie dough
  • 1 (8 ounce) package cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 pint strawberries , sliced
  • 12 raspberries
  • 48 blueberries
  • Or fruit of choice
  1. Preheat oven to 350º, bake cookies according to package.
  2. While cookies are cooling, prepare topping.
  3. Beat cream cheese, sugar and vanilla in a small mixing bowl using an electric mixer, until creamy.
  4. Spread mixture on top of cooled cookies.
  5. Arrange fruit on top.


Different fruits on top would be great, too. Kiwis, grapes, oranges and bananas are amazing on fruit pizza.
