Garlic-Parm Cauliflower Mash

Jerry wasn’t too excited when I said I was substituting this for mashed potatoes. He was pleasantly surprised and went back for seconds. I’ve made this with a mixer & it didn’t get creamy. I then made Garlic-Parm Cauliflower Mash with a food processor & it turned out amazing.

Garlic-Parm Cauliflower Mash
 
Ingredients
  • 1 head cauliflower, cut into florets
  • 2 tablespoon olive oil
  • 3 clove garlic, smashed
  • ¼ cup grated Parmesan cheese
  • 2 tablespoon cream cheese
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
Instructions
  1. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  2. Meanwhile, heat olive oil in a small skillet over medium heat. Cook and stir garlic until softened, about 2 minutes.
  3. Transfer half the cauliflower to a food processor; cover and blend on high.
  4. Add remaining cauliflower florets, one at a time, until vegetables are creamy.
  5. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.

I made this with Zesty Lemon-Pepper Pork Chops.  It was a delicious & healthy meal.
