This Italian Sausage, Spinach & Tortellini Tomato Soup gets our vote for best soup of the year. We made it two days in a row and had leftovers on day three…talk about a successful recipe.

Italian Sausage, Spinach & Tortellini Tomato Soup

Sarah and I tweaked a recipe that we found. Obviously, double the amount of garlic, use olive oil instead of other oils, make it spicier, use less salt than recipe calls for, more onions never hurt & use as many fresh ingredients as possible. Voila, Our version.

Italian Sausage, Spinach & Tortellini Tomato Soup
Ingredients
  • 1 tablespoon olive oil
  • 1 lb Italian Sausage , I used hot
  • 1 medium onion , diced
  • 4 cloves garlic , minced
  • 1-28 ounce can petite diced tomatoes
  • 1-15 ounce can tomato sauce
  • 1-32 ounce box of chicken broth
  • 2 Tablespoons fresh basil , chopped
  • 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 package tortellini
  • 2 cups packed fresh spinach , stems cut off
Instructions
  1. Heat oil in a large pan, add diced onion. Saute until onions are soft.
  2. Crumble Italian Sausage and garlic with the onion. Cook until sausage is no longer pink.
  3. Stir in diced tomatoes, tomato sauce, chicken broth, basil, salt and pepper.
  4. Bring to a boil, reduce heat to low, and cover.
  5. Let soup simmer for 20-30 minutes.
  6. Add tortellini and spinach and simmer for about ten minutes, until pasta is tender.
  7. Serve with shredded Parmesan.
