Pumpkin Pie Cookies & Mini Pumpkin Pies

It’s pumpkin time of the year again. Give these Pumpkin Pie Cookies & Mini Pumpkin Pies a whirl. It’s just like pumpkin pie only smaller versions.

Mom and I baked these Pumpkin Pie Cookies & Mini Pumpkin Pies. Let us know how they turn out.

Pumpkin Pie Cookies & Mini Pumpkin Pies
Ingredients
  • 1 can (15 ounces) canned pumpkin
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 2 ounces cream cheese , softened
  • 1 Tablespoon flour
  • 2 Tablespoons heavy cream
  • 2 teaspoons pumpkin pie spice
  • Double pie crust (refrigerated or homemade)
  • Cool Whip , Reddi Wip or whipped cream for topping
Instructions
  1. Preheat oven to 425º.
  2. In a small bowl beat together brown sugar, egg yolk, cream cheese, flour, cream and pumpkin pie spice.
  3. Add pumpkin to the brown sugar mixture and stir until combined.
Pumpkin Pie Cookies
  1. Unroll (or roll out) your dough. Using a 3" cookie cutter, cut 12 circles. Place on a parchment lined pan and gently fold the edges up (approx. ⅛") on each circle.
  2. Divide pumpkin filling over the mini crusts and smooth the top. Bake 12-14 minutes or until crust is lightly browned.
Mini Pumpkin Pies
  1. Unroll (or roll out) your dough. Using a 3" cookie cutter, cut 12 circles. Place in muffin tin and gently fold the edges up to fit the tin.
  2. Divide pumpkin filling over the mini pies and smooth the top. Bake 17 minutes or until crust is lightly browned.
  3. Let cool and top with favorite whipped topping.
