Red Velvet Cheesecake Marbled Brownies

Red Velvet Cheesecake Marbled Brownies are so pretty. They are rich but not too sweet.

I whipped up a batch, took pictures, sent half home with my mother-in-law and took the rest over to my pregnant friend, Leslie.

I’m still trying to get the hang go baking. I cook well. But, baking is a bit different. I can take a dish, add a little of this and a lot of that, taste it and add more. I didn’t have measuring spoons until a month or two ago. Who cooks by measuring? Not me. As my pictures get better, so will my baking 🙂

Red Velvet Cheesecake Marbled Brownies
  • 3 1/4 cups all-purpose flour
  • 2 1/4 cups granulated sugar
  • 3 Tbs cocoa powder , I think I would add 4
  • 1 tsp salt
  • 1/2 tsp baking power
  • 3 large eggs
  • 1 cup vegetable oil
  • 4 Tbs milk , divided
  • 1 tsp vanilla extract
  • 1 Tbs red food coloring
  • 2 tsp white vinegar
Cheesecake layer
  • 2 (8 oz) package cream cheese
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla
  1. Preheat oven to 350º.
  2. Grease a 9x13 pan with butter or Pam.
  3. In a large bowl, whisk together flour, sugar, cocoa power, salt and baking power.
  4. In a medium bowl, whisk together eggs, vegetable oil, 2 Tbs milk, vanilla extract, red food coloring and vinegar.
  5. Pour the wet ingredients into the dry ingredients, mix until combined. The batter will be very thick, almost moldable.
  6. Remove 3/4 cup of batter and mix in a small bowl with 2 Tbs of milk. Set aside.
  7. Pour the large bowl of batter into the greased pan. Use a spatula to smooth the batter to reach the corners.
  8. In a separate bowl, beat cream cheese and sugar until fluffy, about 2 minutes.
  9. Add eggs and vanilla, beat until there are no lumps.
  10. Pour the cream cheese mixture on top of the red velvet layer. Spread evenly to all edges.
  11. Drop spoonfuls of the red velvet (mixed with milk) batter on top of the cheesecake layer.
  12. Drag a knife throughout the layers to create swirls.
  13. Bake for 30 minutes, rotating half way through, or until the center no longer jiggles.
  14. Let cool completely on a wire rack before cutting.

I have seen people make a dessert similar to this for Valentine’s Day. Use a bigger pan and after they cool, use a heart shaped cookie cutter. Too cute.
