Rosemary Skillet Potatoes

When we have a dinner party, it gets very hectic just before dinner is served. It sometimes gets overbearing trying to greet guest, serve drinks and finish cooking dinner. I love making Rosemary Skillet Potatoes. All of the ingredients are placed in the skillet an hour before dinner and let simmer until dinnertime.

Rosemary Skillet Potatoes
Ingredients
  • 3 pounds potatoes , I used 2 bags small red and 1 bag new potatoes
  • .66 oz package fresh rosemary
  • 5 cloves garlic , minced
  • Sea salt and fresh ground pepper , to taste
  • 3 tablespoons olive oil
Instructions
  1. In a large sauté pan, heat oil over medium heat.
  2. Add potatoes, rosemary, garlic, salt and pepper.
  3. Reduce heat, cover and simmer for 1 hour or until potatoes are soft and easy to pierce with a fork. Stir a few times.
  4. Let rest for 15 minutes before serving.

Rosemary Skillet Potatoes

Any kind of potato will turn out great in this recipe. I prefer mixing the red potatoes and the new potatoes. If using larger potatoes, cut into large bite size squares (about an inch and a half pieces).
